I can't take any of the credit for this one - I got the recipe from Women's Health which I subscribe to and LOVE. This recipe was a HUGE hit with my husband and son - they both ate TONS of asparagus, and that's saying something!
Chicken Mojito with Mint and Lime over Couscous
Ingredients:
1 cup couscous
1 bunch of asparagus
garlic powder
salt
black pepper
2 tsp olive oil
1/2 cup chopped red onion
2 cloves garlic, minced
1 Tbsp sugar
1 lb boneless skinless chicken breasts, cut into 1 inch pieces
1/2 cup light rum (or white wine - tastes just as good and more likely to be found in your fridge)
1/2 cup chicken broth
2 Tbsp lime juice
1/4 cup chopped fresh mint
Instructions
1.) Cook couscous according to package directions
2.) Preheat oven to 400 degrees. Coat baking sheet with cooking spray. Arrange asparagus on baking sheet and coat with cooking spray. Season with garlic powder, salt and pepper. Roast 15 minutes or until fork-tender.
3.) Meanwhile, heat oil in large skillet over medium heat. Add onion, garlic, and sugar. Saute about 3 minutes.
4.) Add chicken and saute 3-5 minutes more - until golden brown on all sides. Add rum (or wine) and broth and simmer 5 minutes.
5.) Remove from heat and stir in lime juice. Season with salt to taste.
6.) Chop asparagus and arrange with couscous and chicken mixture. Garnish with chopped mint.
7.) Enjoy!
